Is your car a Mk1 or Mk2? Mk1 has an engine temperature read out Mk2 just has an over temp light.
If you have a Mk2 your options are much better than Mk1. The only big deal is if you wish to retain the radio controls on the wiper stalk, illumination control and the centre display.
I am sorry, I have not changed the radio so I hope someone comes along with more practical advice for you.

Have a look at the end of this topic Radio Change it may give you some ideas.
No DAB on the radio I fitted, it was a bit new then and not many radios had the option at the time. There seem to be a lot more with the DAB option now so all you'd need to do is look at where to fit a DAB antenna.

If at first you don't succeed, destroy all the evidence and pretend you never tried

2004 would me a MK1, easiest to swap radios on, less computer integration.
FM/DAB aerial on the roof is the best place for reception of the signals and this rooftop DAB/FM aerial (here) with replace the existing FM roof top aerial, so no need to drill holes.
There are windscreen mount DAB aerials (here), but although they are considerably easier to fit, they don't give the strongest signal

Touchscreens are quite easily fitted to the C3, particularly the MK1 (before 2006) because the early cars just need a simple wire swap to operate correctly with the universal touchscreen head units.
There are a couple of 2DIN touchscreen installs for the C3 on the forum
DAB can often be added by 'USB adaptor' (here)
to the touchscreens that support USB (like these head units that run android)
