I have done the above when refilling coolant. But today the code p0598 came back on I may have a faulty thermostat? Maybe that's causing the coolant to run out? Also does my c3 have it with a sensor?

The thermostat won't loose coolant.
The needs to be a hole in a pipe/matrix or a poor sealing head gasket.
P0598 comes back as a generic 'Thermostat Heater Control Circuit Low' so you need to look for the sensor on the thermostat housing to see if it has one.

I replaced the thermostat yesterday, cleared code and checked again and no fault code for thermostat. However, I have encountered a major problem. The eml light and SERV light came on so I connected my reader and got these codes:
P1153
P1161
For P1153 it says to look at manufacturers manual so Im not sure what that is

Car also goes into limp mode and doing mph and keeps revving up and down by its own

I don't really know Citroens too well but I know engines and cars. You'd only lose coolant via a split pipe/hose, head gasket failure or leaky water pump seal. The coolant and oil systems are sealed and pressurised systems.

Oil level seems fine. I dod take it to a different mechanic and his view was that the oil and coolant might be mixing up together, if that is the case then a type of seal needs replacing?

So basically, you have the block (bottom of an engine) and the head (top of an engine). They are both clamped down ontop a headgasket.
The headgaskets job is to seal the cylinders and to stop oil and water channels from mixing. Headgaskets usually fail from excessive heat, so the head or even block could get warped, or the headgasket material could fail.
When they do, you'll get oil mixing with coolant or vice versa.
To tell if it's gone or not, you can check for typical signs, such as over heating, milky oil under the oil cap, dodgy coloured coolant, or you can do or get a garage to do a leak down test (https://youtu.be/QA7KVQq9vKA)

Headgasket was already replaced cost me £300 when I bought the car. After that I'm not sure if my faulty thermostat caused my car to overheat has affected the hg.
